Dear Members and Owners, As the sun-drenched days of summer wind down, I hope the endless travel possibilities in our second Club Traveler issue of 2024 encourage you to make the most of the remaining months. Whether it’s a spontaneous fall escape or planning your dream vacation in the year ahead, I invite you to dive in and find your travel inspiration. I’d be remiss if I didn’t mention that August marks one year since the devastating wildfires in Maui. Home to two of our resorts and numerous Team Members, Maui’s resilient community is determined to rebuild and heal. HGV remains committed to supporting the community through our Maui Support Relief Fund, which has provided nearly $500,000 in emergency grants for people impacted by the fires and food and accommodations for Team Members. Vacationing on the island this season is a way to help boost the local economy, which relies on the aloha of visitors. Through kind, community-led tourism, we can extend a helping hand to those who have endured so much. So, if you haven’t planned your next escape yet, I urge you to consider a stay on this beautiful island at Maui Bay Villas, a Hilton Grand Vacations Club, which had its formal grand opening in June, or the rebranded Hilton Vacation Club Ka’anapali Beach. Long wine lists in bars and restaurants can be hard to navigate — which is where a sommelier can be invaluable. Sarah Looper, sommelier at New York’sil Buco restaurant, and winemaker and sommelier André Hueston Mack, of & Sons Hospitality groupin Brooklyn, New York, share their advice to unlocka deeper appreciation for what’s in your glass.

Trust Your Own Taste
According to Sarah, the no-low trend is gaining momentum in the United States. “For low-alcohol, I recommenda spritz using red wine, fruit and ice to make a light sangria. Or make a low-alcohol cocktail with shorter measures of vermouth, for example. Other alternatives include low-alcohol teas by Spain’s Ama Brewery and MURI’s aperitif drinks from Denmark, which blend fermented fruits and botanicals.” André continues: “Certain styles like riesling and moscato naturally have lower alcohol levels than bold red wines like cabernet sauvignon or shiraz. Options such as alcohol-free sparkling wine are increasingly available and maintain the right flavor characteristics.”
“Wine enjoyment is subjective: Understanding what you like provides a solid foundation for deciding what to drink,” says André. “While factors like food pairing, producer reputation and wine region can enhance the experience, they should support your taste preferences rather than override them.” Sarah suggests starting with a grape you know, then trying something new on the same taste scale. “For instance, if Chablis is a favorite, you could perhaps order a Vouvray or a carricante from Sicily.”
“Stay hydrated, moderate your intake and be mindful of sugar by opting for drier varieties since sweet wines can contribute to headaches,” adds André. “Some individuals may be sensitive to histamines (byproducts of fermentation), so avoiding histamine-rich options like aged red wines may help.” Sticking to one color of wine to avoid a headache is a myth, says Sarah. Instead, she suggests “asking places if they do half-glass pours. Start with that and some bread to line the stomach.”

Dishes like I Love You a Laksa, a creamy risotto and Malaysian curry mash-up with scallops, clams and Kauai shrimp, or Where’s Da Beef? that swaps out meat Bolognese for mushrooms and cauliflower are must-tries. Tempting homemade desserts include Lemon Dream, a take on a lemon meringue pie with passionfruit curd and kapa-printed meringue, and Da Kahala Shuffle, a chocolate and Kahlua mud pie named after the surrounding neighborhood.

Honolulu-born chef-owner Keaka Lee cut his teeth in Michelin-starred restaurants like New York’s Le Bernardin and Gramercy Tavern before returning to cook at Vietnamese restaurant The Pig & The Lady. Four years ago, he opened the now James Beard-nominated Kapa Hale, combining Hawaiian ingredients with Asian-fusion influences. On the walls, traditional geometric kapa motifs tell stories through pattern — and Keaka does the same with his food.

During Fine Time (weekdays from 2–5 p.m.), many small plates are half-price. Plus, there’s a rotating selection of $5 wines and cocktails like the Pandan Bear, a pandan-infused white rum concoction served in a bear-shaped glass.
Mom’s Banana Bread — an updated version of Roy’s mother’s recipe that uses local honey, Hawaiian sea salt and a crunchy top of demerara sugar — has been a hit since day one. Also try his take on classics such as spicy tomato pasta, salt and pepper shrimp and the Le Roy burger, an elaborate cheeseburger made with brisket, short rib and chuck steak.
Proving that not all culinary action happens on The Strip, Chef Roy Ellemar launched Fine Company in Downtown Summerlin last year. The ethos is food for “every day, anytime” and it reflects both his Hawaiian upbringing and Filipino-American heritage. Eat inside the minimalist space (the warm neutral palette takes its cues from the desert landscape) or on the terrace under the shade of a Brazilian peppertree.

To start, try the shashliks, an elevated version of street food skewers popular in Turkey and Syria. Ingredients such as seasoned shrimp or pomegranate glazedsalmon are charred to perfection and served with rice pilaf, roasted tomatoes and chili, Tunisian pickles and Bibb lettuce. Signature dishes include crispy roasted lamb neck, showcasing the flavors of North Africa, and the lamb kofta terra cotta that comes in a spicy tomato sauce, served with a traditional bread dome. Fordessert, order the silan, a vanilla sponge cake with creamy halva (tahini mousse).
Opened in Midtown Manhattan in 2023, Acadia is the second restaurant from innovative Israeli-Tunisian chef Ari Bokovza (his first was Dagon on the Upper West Side), whose food focuses on the Levant region. One side of the wood-paneled space features an open kitchen with a taboon oven for baking bread, a rotisserie and colorful tiled columns inspired by spice markets.

The tiny island of Sesoko is just a 1.5-hour drive over a stunning bridge from the main Okinawa island. Despiteits diminutive size, Sesoko has several postcard-perfect beaches worth visiting. Nishibama Beach is an undeveloped stretch of powder-soft, white sand on the south side of the island where you could have the beach to yourself, even in high season. The more lively but still peaceful Sesoko Beach on the northeast coast offers amenities like beach chairs and a casual restaurant.
Relax on Untouched Tropical Beaches
Extending life is an art in Okinawa, home to the world’s highest concentration of centenarians. Longevity-boosting local dishes to try include thenutrient-packed goya chanpuru (a stir fry made withbitter melon) and the antioxidant-rich beni imo (purple sweet potato), which is delicious on tarts and as a sidein place of rice. For an authentic no-frills culinaryexperience head to Onna No Eki — where local chefsserve from a little hatch in Onna Station.

It’s impossible to get lost and hiking is easy for all levels. If you’re hiking some of the longer trails on the main island, keep an eye out for the indigenous Okinawa rail, a rare, flightless bird.

Supporting small businesses at a farmers’ market is an excellent way to discover some of the finest local flavors, produce and products. On Oahu, check out the vibrant Kakaʻako Farmers Market (Saturdays, 8 a.m.–12 p.m.), known for its diverse range of stalls offering everything from local art and handcrafted beachwear to fresh-baked goods. Over on Maui, the Wailea Village Farmers Market (Tuesdays, 8–11 a.m.) provides an opportunity to sample local produce and traditional recipes, as well as pick up island-inspired designs. Meanwhile, the Hilo Farmers Market in downtown Hilo (daily, 7 a.m.–3 p.m.) is a lively venue where you can find island jams, roasted Kona coffee and a wide array of local delicacies, with Wednesdays and Saturdays featuring an even greater variety of vendors.
